Does a woman who's into you stare/glance at you cause she thinks you're beautiful? What am I supposed to do?

It seems possible she might be interested but some women just smile at others and so you would not know. I think ti is difficult and you need to tread carefully. Since it is a workplace, you need to be extra cautious unless she makes a move.
